Fresh herbs from nearby gardens, hand-selected produce from trusted growers, and sustainably sourced meats and seafood converge in a symphony of warmth and refinement. Whether it’s the comforting depth of a slow-braised duck confit or the delicate brightness of a citrus beurre blanc, SIMONE balances nuance and nostalgia.

From the flicker of a candlelit dinner to the buzz of a Sunday brunch, our kitchen dances between texture and aroma, acidity and richness, surprise and familiarity. Each dish—whether it’s a reinterpreted Coquilles Saint-Jacques, a caramelized onion tarte fine with aged goat cheese, or our signature lavender-honey roasted chicken—is carefully crafted, finished with the kind of finesse that invites both curiosity and comfort.
