Our Origins
SIMONE was born from a dream shared by our founders—a French restaurateur and a creative partner with deep roots in both hospitality and the arts. Inspired by the Parisian bistros they fell in love with on Rue Saint-Honoré and tucked-away wine bars in Lyon, they sought to bring the essence of those experiences to a new audience. Not through replication, but through reverence and reinvention.
They imagined a space that would celebrate the ritual of French dining without the pretense, where a great steak frites could coexist with vegan ratatouille, and where the service was as memorable as the food itself.
From that vision, SIMONE was born. And like its namesakes, it was always meant to make a statement—not loudly, but with grace, intellect, and soul.
